Habitation Velier - Papa Rouyo White 2021

Pure single rum, a small batch composed 100% of pure Matos cane juice, a true expression of the historic hectares of Charles Albert Ruscade, known as Papa Rouyo, who takes pride in the traceability of his rums from cane to bottle. The sugarcanes used on the 16 hectares are of different varieties: Jaune cane (B5992), Rouge cane (R579), and Matos cane (B 80.0689). The sugarcane is grown in the most traditional and natural way possible: after being cut by hand, it is immediately transported to the mill to be crushed. The distillery is equipped with a 2,200-liter wash still and an 1,100-liter spirits still. Distillation is carried out using the batch method in two stages, allowing the heads and tails to be cut off while preserving the cœur de chauffe. A world premiere for an exceptional pure single rum
