Clairin - Vieux Sajous 4 Y.O. Second Release

Sajous Clairin is produced in the great terroir of St. Michel de L'Attalaye, about a 4-hour drive by off-road vehicle north of Port-au-Prince. It is made with Cristalline cane, one of the finest heirloom varieties, now grown only in Haiti, hand-harvested at perfect ripeness and transported by pack animals to the distillery. It is pressed in the small mill more gently than is typical in the French Antilles. Fermentation begins spontaneously with indigenous yeasts. The distillation still is heated by the fire of "bagasse," the squeezed cane fiber dried in the sun. Traditionally, Clairin has never been aged. Here, following the releases of Clairin Ansyen jeune, we have bottled an aged distillate for the second time, matured for 4 years.

Vieux Sajous is the result of a blend of 12 Ex-Caroni and Ex-Single Malt Scotch Whisky barrels, designed to enhance the evolution from the primary aromas of Clairin to an aromatic complexity created by the esterification process.
