Capovilla - Rhum Rhum Liberation 2020

“Rhum Blanc Liberation 2020 | 45°” is another fruit of the magnificent collaboration between Luca Gargano and the master Gianni Capovilla. It is a Pure Single Agricole Rhum produced from an ancient variety of sugarcane, the Rouge B47.259, which has almost disappeared from the Antilles. Once perfectly ripe, the canes are cut by hand with traditional “coutelas” and transported to the distillery on “cabrouet” carts pulled by oxen. The freshly pressed juice is not diluted, as is customary in the production of agricultural rums; fermentation takes place in open vats at a controlled temperature and lasts up to 5/6 days. After distillation begins a long resting period in steel vats lasting up to a year, during which the alcohol content is slowly reduced. The rum is then put to age in French oak barrels that have held some of the finest wines from the greatest crus in France. All Liberation rums bear the year of “liberation” from the barrel on the label. This version was bottled at 45°.
