It is made with Cristalline cane, one of the finest heirloom varieties, now grown only in Haiti, hand-harvested at perfect ripeness and transported by pack animals to the distillery. It is pressed in the small mill more gently than is typical in the French Antilles. Fermentation begins spontaneously with indigenous yeasts. The distillation still is heated by the fire of \"bagasse,\" the squeezed cane fiber dried in the sun. Traditionally, Clairin has never been aged.
